Marinated Chickpea Salad

A simple but delicious lunchtime salad that capitalizes on the marinated chickpeas made with canned garbanzo beans. It's easy to put together but oh so delicious.

- 1/2 cup marinated chickpeas
- 2 cups mixed greens roughly chopped
- 1 tablespoon toasted slivered almonds
- Shaved parm for garnish
- Fresh parsley for garnish
- 2 tablespoons Red wine vinegar
- 2 tablespoons Garlic infused olive oil
In a medium sized bowl, whisk together the red wine vinegar and olive oil. Add in your greens, almonds, and marinated chickpeas then toss together to combine. Plate and garnish with shaved parm, if desired. Enjoy immediately.
