Marinated Chickpea Salad

When taking the time to marinate chickpeas, one of my favorite ways to use them is in this Marinated Chickpea Salad. It’s a vibrant salad that’s ready in minutes making this the perfect work-from-home lunch or a fantastic option to take on the go.

Ingredients for the Marinated Chickpea Salad

This salad is not difficult to assemble and I personally love salads that are super adaptable and customizable. When it comes to cooking with the seasons, I find that having a good vinaigrette recipe on hand goes a long way to making seasonal salads easy to put together. Plus using good quality ingredients makes this absolutely delicious. The recipe card below is for one single serving salad. I tend to keep a salad recipe like this in my back pocket when pressed for time but need to make something that feels nourishing for lunch.

Here’s what we’ll need:

  • 1/4 cup marinated chickpeas (see recipe here)
  • 1-2 cups mixed greens, roughly chopped
  • 1 tablespoon slivered almonds
  • Shaved parm for garnish
  • Fresh parsley for garnish
  • Red wine vinegar (this one is a favorite and I love the way it emulsifies when whisking the dressing together)
  • Garlic infused olive oil (I love this one to save a step in grating garlic, but you can use any olive oil brand you love and grate a clove of garlic into the dressing.)

METHOD

In a medium sized bowl, whisk together the red wine vinegar and olive oil. Add in your greens, almonds, and marinated chickpeas then toss together to combine. Plate and garnish with shaved parm, if desired. Enjoy immediately.

Ingredients
