Easy Italian Chopped Salad

Easily customizable depending on the CSA veggies on hand for a given season. Fresh chopped vegetables, mixed greens, and a stellar dressing make this an easy lunch perfect for everyday.

Ingredients
  

  • 3 cups roughly chopped romaine
  • 5 slices salami
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup sliced English cucumber cut into quarters
  • 1 oz. smoked mozzarella diced into small cubes
  • 1 tablespoon pepperoncinis finely chopped
  • 1/2 small shallot thinly sliced

Dressing

  • 2 tablespoons red wine vinegar
  • 2 tablespoons garlic infused olive oil
  • 1 tsp dried oregano
  • Pinch of crushed red pepper flakes
  • kosher salt and black pepper to taste

Instructions
 

  • In a large bowl whisk together your dressing ingredients until well combined. Set bowl aside and chop your romaine, salami, tomatoes, cucumbers, smoked mozzarella, and pepperoncinis.
  • To the large bowl add in your salad ingredients, adding in only half of the salami, mozz, and pepperoncinis. Toss together then plate. Top with the remaining half of salami, mozzarella, and pepperoncinis.
