Italian Chopped Salad

Lunchtime salads are my jam and this Italian Chopped Salad is one to keep in rotation. I’m always looking for ways to enjoy fresh, vibrant salads for lunch during the days when I work from home.

This salad is my take on an Italian Chopped Salad I enjoyed at Lucky Penny in Santa Barbara and it was so good, filled with crunchy briny goodness, that I needed to add this to the lunch salad mix.

Why You’ll Love This Recipe

I love a good salad for lunch that I can keep in my head for the days when I need to make something fast. This salad is exactly that. It’s super customizable so we can use any fresh vegetables on hand from our weekly CSA box. The dressing has some zip and zing to brighten the greens. Plus, you can swap our the salami for diced or cubed sopressata or even crisped up prosciutto.

Ingredients to Make This Easy Italian Chopped Salad

This salad mix will yield two servings. It’s perfect for two days of work-from-home lunches or to share with a loved one. Here’s what we need:

3 cups roughly chopped romaine

5 slices salami

1/2 cup cherry tomatoes, halved

1/2 cup sliced English cucumber, cut into quarters

1 oz. smoked mozzarella, diced into small cubes

1 tablespoon pepperoncinis, finely chopped

1/2 small shallot, thinly sliced

For the dressing:

2 tablespoons red wine vinegar

2 tablespoons garlic infused olive oil

1 tsp dried oregano

Pinch of crushed red pepper flakes

kosher salt and black pepper to taste

How to Make This Italian Chopped Salad

This Italian Chopped Salad is ready in just minutes. Here’s how we make it:

In a large bowl whisk together your dressing ingredients until well combined. Set bowl aside and chop your romaine, salami, tomatoes, cucumbers, smoked mozzarella, and pepperoncinis. To the large bowl add in your salad ingredients, adding in only half of the salami, mozz, and pepperoncinis. Toss together then plate. Top with the remaining half of salami, mozzarella, and pepperoncinis.

Easily customizable depending on the CSA veggies on hand for a given season. Fresh chopped vegetables, mixed greens, and a stellar dressing make this an easy lunch perfect for everyday.

Ingredients
  

  • 3 cups roughly chopped romaine
  • 5 slices salami
