This is a delicious twist on the classic French snack. Use the best quality butter you can get to make a tartine that is perfect for a snack or light lunch.
Prepare your sliced bread for toasting. You can opt for a toaster but my favorite way is by toasting the bread in the oven. Preheat the oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with foil or parchment paper. Lightly spray cooking spray on the parchment paper or foil. Add your sliced bread and lightly spray the tops with cooking spray or drizzle with olive oil. Bake the sliced bread for about 5 to 7 minutes until the edges are golden brown and bread is toasted.
While the bread toasts, prepare the radishes. We'll first begin by slicing the radishes thin. To do this, cut the root end off and discard. Cut the tops of the radishes and discard. Place the radish cut side down, slice the radish in half to create two half moons. Slice radishes thinly into half moons. Set the sliced radishes to the side.
Once the bread is toasted, slather a tablespoon of butter onto the top of each toast. Layer slices of radishes on top. Drizzle with a little olive oil and sprinkle a little salt. If using herbs, garnish with the chopped fresh herbs and a grind of black pepper. Serve.
