I’m never want for an easy recipe and this Quick Saute Sugar Snap Peas with Citrus and Mint is the easiest of them all for spring! Quick cooking sugar snap peas with a bit of citrus zest and mint has been my favorite way to enjoy these first spring pea pods.

What You’ll Love About This Quick Sautéed Sugar Snap Peas with Citrus and Mint

A delicious side dish that’s ready in 10 minutes and uses the beautiful garden peas. What’s not to love? I love that we use the whole pod in this sauteed sugar snap peas recipe. You’ll love the bright green peas flavored with fresh herbs and lemon zest. Serve alongside your favorite grilled or roast protein and you’ve got a simple recipe at the ready for any busy weeknight. 

Ingredients to Saute Sugar Snap Peas

This super simple sugar snap pea recipe is unbelievably easy to make and requires just a handful of ingredients. Here’s what we need to make this deliciously healthy side dish: 

  • 8 ounces sugar snap peas. This will be enough to make 4 servings. Perfect for a second helping, a small gathering, or to make lunches with any leftover snap peas. 
  • 1 teaspoon chopped fresh mint leaves. I love the bright notes of mint with citrus zest to create a vibrant simple side dish. 
  • 1/2 teaspoon citrus zest. Lemon works well here but I’ve also played with orange zest. Blood orange zest or Cara Cara orange zest add a hint of sweetness that compliments the sugar snap peas in a lovely way. The zest is a game changer and it truly adds great flavor. 
  • Kosher salt and ground black pepper
  • 1 tablespoon olive oil

How to Make This Quick Sautéed Sugar Snap Peas with Citrus and Mint

​This Sautéed Sugar Snap Pea side dish is ready in 10 minutes. Here’s how we make it: 

  • Preheat a cast iron skillet or stainless steel skillet over medium high heat with 1 tablespoon olive oil.
  • Trim the ends of the snap peas and remove the tough string along the sides of the pod. Slice them on the diagonal into 1/2 inch pieces. Set aside in a small bowl.
  • Zest citrus and chop mint leaves.
  • Add the snap peas to the heated large skillet and sauté for 2 to 3 minutes until the peas turn bright green and skins begin to soften slightly. Add the 3/4 teaspoon salt, ground black pepper, citrus zest, and mint. Stir quickly for 1 minute to allow herbs and citrus to release their aroma. Remove from heat and spoon into serving bowl. Enjoy immediately.

What to Serve with Quick Saute Sugar Snap Peas with Citrus and Mint

This is a great side dish for any roast or grilled protein for a complete meal that can be filed away for easy dinner ideas. Think grilled pork chops or this recipe for roast chicken thighs. I also like serving this alongside slow roasted fish.

Ingredients
