It's Week 8 of Dinner Plans and we're leaning into slow Sunday starts!
Sunday Breakfast is one of my favorite weekly meals. I love the slower start to the morning, savoring a hot cup of coffee while reading the latest book. It also gives me the chance to spend a little more time making something delicious to begin the day versus the speedy scramble or yogurt bowl.

And just like that, we're heading into the final week of February. The whispers of spring are growing louder, now and I see hints of the changing season's produce offerings at the market. I'm gearing up for the monthly pantry organizing so that I'm keeping track of what we've eaten and what remains. This helps me to make sure I'm keeping the grocery hauls in check as well as within budget for the month.
Here’s what caught my attention in our garden, fridge, freezer, and pantry this week:
- Ground Beef
- Swiss Chard
- No-boil lasagna noodles
- Arugula
- Dried beans
- Cabbage
- Carrots
- Potatoes
- Cod
Our Game Plan for Dinner this Week:
Sunday: Lasagna with Swiss Chard and Ground Beef
Monday: Roast Beet and Arugula Salad with Citrus Vinaigrette (recipe idea here)
Tuesday: Chipotle Marinated Cabbage with Mantequilla Beans and Sonora Flour Tortillas
Wednesday: Lamb Ragu with Roast Cauliflower Purée
Thursday: Creamy Potato Soup with Braised Collard Greens and Bacon Bits
Friday: Baja Fish Tacos with Quick Cabbage Slaw
Saturday: Pizza Picnic with Black Truffle Spread, Fior di Latte, and Arugula
