It's Week 14 of Dinner Plans and we're cooking up all the spring things!
We're back to work and school routines this week but not before celebrating a birthday (mine) and Easter Sunday with the family. The highlight of the weekend has got to be the birthday cake. Dark chocolate cake with layers of dark chocolate ganache, meyer lemon curd, a roasted rhubarb and strawberry cream, and finished with a vanilla bean swiss buttercream. It was quite the project, but I loved it so much! I love this tradition of baking cakes with my family as a part of celebrating our birthdays.
Dinner Plans for Week 14
This week I headed to the Farmers Market for a little birthday solo time to pick up a few springtime goodies. I'm grating the beets with carrots for a lunch time salad that is easy to prep for a few days. I've got salmon burgers on repeat for salads and a quick slaw that is zesty and bright for easy, speedy weeknight meals. For the spinach and arugula I have on hand, I'm making a pesto for pizza night and for a sauce for meatballs. I've been upping the beans and grains in my meals lately and may even add a dollop of pesto to brothy beans or a grain bowl. That sounds so good.

Sunday: Spiral Ham with Blood Orange & Rosemary Glaze, Carrots on Parade, Roast Potatoes and Caramelized Cabbage
Monday: Vegan Mexican Sopes
Tuesday: Chipotle Lime Salmon Tostadas
Wednesday: Grilled Salmon Burgers with Quick Slaw
Thursday: Steak Frites with Garlic Herby Compound Butter and Sautéed New Potatoes with Sorrel Butter and Green Beans
Friday: Grilled Fish with a Sugar Snap Pea and Radish Salad
Saturday: Pizza with Sliced Sugar Snap Peas, Prosciutto, a Spinach and Arugula Pesto, and Burrata for a lovely spring time change up
