It’s Week 2 of Dinner Plans! It’s a new year, so I’m resetting the weekly count for our dinner plans! We’ve got rain in the forecast this week so we’re cooking up some nourishing, warming soups and using the oven for a batch of enchiladas. We’re going meatless this week as I test a few recipes too!

Monday: Easy Ramen with Tofu & Bok Choy (Recipe in development)
Tuesday: Speedy Sopes with Black Beans, Squash, & Potatoes (Recipe in development)
Wednesday: Warm Beet Salad with Lentils & Farro (Recipe in development)
Thursday: Veggie Enchiladas with diced potato, zucchini, and black beans
Friday: A spin on Enfrijoladas (Tortillas with Bean Puree) using black beans and blue corn masa for tortillas.
Saturday: Crispy Cheesy Pan Pizza from King Arthur Baking
