Dinner Plans: Week 7

It’s Week 7 for Dinner Plans and this week is a full one with Super Bowl and Valentine’s Day. Valentine’s Day is Tuesday and we’ve got a special family dinner planned. The kids have requested pizza so we’ll spend the day making that together.

This week there will also be loads more salads as we make our way through all the cucumbers in our box. I use one cucumber to make pickles but still have at least a half dozen more. What will I do? I’ve been putting them in my water jug with slices of lemon and having them with hummus for a mid-day snack.

This week, I’ll try them in my morning bagel with a schmear of dill and scallion cream cheese, too. This just goes to show all the ways we can go through the produce without burning out and to minimize waste.

Sunday: Super Bowl Eats! Vegetarian Sheet Pan Nachos, Chili Dogs, Mini Sliders, and Hot Honey Garlic Wings!

Monday: White Bean Soup with Kale, Potato, Broccoli & Sausage (recipe test)

Tuesday: Grilled RIb Eye Steaks with Roasted Garlic Butter over Herbed Polenta and Parmesan Roasted Broccoli 

Wednesday: Grated Beet & Carrot Salad with Farro & Dates (recipe in development; adapting from The French Market Cookbook)

Thursday: Vegan Kale Pesto Pasta (recipe test)

Friday: Charred Romaine Salad with DIY Baked Potato Board

Saturday: Roasted Corn Salad Pizza with Lime-Cotija Dressing (using this salad recipe for inspiration)
