It’s Week 12 of Dinner Plans and we are feeling lucky today!
Hoping this St. Patrick’s Day affords you a bit of luck too. For us, we’ve been so lucky to have had a bevy of produce remaining. With a whole head of cabbage, carrots, and a mix of Yukon gold and red potatoes, we’ve got all the ingredients for a proper corned beef with cabbage, carrots, and potatoes. I’ve got plenty to make a brown butter colcannon to serve alongside. I’ll add a mix of baby kale from the garden as I see our kale is finally ready for harvesting.
Dinner Plans for the Week
This week I’ve got a number of recipes to test and write up this week. After a small audit of the recipes on the website, I noticed just how many were in the pasta category and as I often come here to find recipes to help plan our weekly meals, I realized I need to incorporate some variety especially since pasta has largely been left off our menu lately. Our dinners as of late have consisted of primary protein portions, large salads, and plentiful servings of veggies.
I intend to have these recipes written and published on the blog by month’s end. From savory roast meats to bright and robust salads, you’re going to love what’s next as we keep on Cooking with Our CSA.
Our Game Plan for Dinner this Week:
Sunday: Slow Cooker Corned Beef with Cabbage, Brown Butter Colcannon, and plenty of carrots and potatoes
Monday: Hearty Winter Vegetable Soup
Tuesday: Lion’s Mane Fajitas with Fresh Pico De Gallo (final recipe test)
Wednesday: Slow Cooker Pot Roast with Braised Cabbage, Carrots, and Potatoes
Thursday: Green Curry Glazed Tofu inspired by NYT Cooking
Friday: Grilled Fish Tacos with Avocado Crema for Lenten Fish Friday
Saturday: Pizza with Harissa Spiced Tomato Sauce, Kalamata Olives, and Dollops of Whipped Feta (this was so good last week we had to have it again topped with a salad too!)
