Dinner Plans: Week 20

It’s Week 20 of Dinner Plans and we’re craving bright and fresh ingredients now!

Today I’ve got some solo plans to enjoy this Mother’s Day that includes a beachtime walk and some fish tacos at my favorite spot. It’s a season of motherhood right now where carving out spaces of time alone is feeling more and more restorative. My husband and I are spending the morning taking the kids to their favorite indoor playground and then I’ll head off for my solo adventure time. For those celebrating today, I hope the day is everything you need it to be to honor and celebrate the mothers and mother figures in your life.

Dinner Plans for the Week

This week’s CSA box is filled with so many goodies for dinner ideas. We are craving bright and fresh flavors for the season. With loads of cucumbers I’m thinking of a smashed cucumber salad with cilantro and mint. I might opt for a chili-lime dressing and add in cotija or queso fresco. We’ve got a couple bunches of greens for salads or a braised baby bok choy to serve alongside some crispy marinated tofu. Packed schedules in these final weeks of school push us to have dinner ready quick.

Our Game Plan for Dinner this Week:

Sunday: Smash Burgers with Crispy Sweet Potato Fries

Monday: Chipotle Lime Marinated Mushroom Tacos with Kumquat Jalepeño Salsa

Tuesday: Chorizo & Potato Tacos

Wednesday: Grilled Chicken Caesar Salad with Romaine and Focaccia Croutons

Thursday: Crispy Marinated Tofu with Broccoli and Miso Braised Baby Bok Choy

Friday: Grilled Fish Tacos or Speedy Salmon Burgers

Saturday: Pizza with Fava Greens Pesto, Spring Peas, Burrata, and Crispy Pancetta
