It’s Week 8 of Dinner Plans and are reveling in California Citrus!
We are bursting with lemons, blood oranges, navel oranges, and mandarins. I’ll juice citrus for morning OJ and try my hand at making a blood orange jam for morning scones. I can’t wait!
Dinner Plans for the Week
We picked up this week’s CSA box and found a number of root veggies and tubers for cozy winter dinners. Loads of California citrus will make their way into baked goods and preserves as I want to hold on to every ounce of blood orange season. Stay tuned for that jam recipe. It’s going to be a delicious one.
Our Game Plan for Dinner this Week:
Sunday: Sunday Roast Chicken with Grated Beet and Carrot Salad with a Blood Orange Vinaigrette
Monday: Stuffed Acorn Squash with Quinoa, Peppers, and Beans (ideas here and here)
Tuesday: Chipotle Lime Chicken Salad with Mango Dressing
Wednesday: Meatloaf with Brown Butter Colcannon
Thursday: Veggie Stir Fry with Carrots, Broccoli, and Crispy Marinated Tofu
Friday: Baja Fish Tacos with Avocado Crema and Cabbage Slaw
Saturday: Pizza with Crispy Prosciutto, Arugula, and a Fig Balsamic Reduction
