Dinner Plans: Week 10

It’s Week 10 of Dinner Plans and my parents are in town! I am so thankful they’re here and the kids are relishing the extra hugs and so much love with them here. My mom is staying with us for a whole week and while we have a couple of fun activities planned it’ll be nice to have her here to see our day-to-day routines, like picking up our CSA!

This week’s Riverdog Farm farm box has a lot of late winter goodies that are giving us the fuel we need for these long, busy days. The mandarins are an instant energy boost given their sweet and bright flavor. Much like the cauliflower, we’re in a bit of a cabbage conundrum. I have 4 heads of cabbage to cook through now. Thinking a slaw of sorts for fish tacos might help with a bit of it. A cabbage focused salad is another option. We’re up for the challenge though. All in the name of reducing food waste.

Seasonal Cooking Tip: A Delicious Trio for Winter

When it comes to seasonal cooking, this year I’m sharing a weekly tip here focused on preparing ingredients, preserving foods, and kitchen hacks that help you save time.

This week we’re talking about the delicious trio of grains, greens, and beans. With winter greens feeling hardy in texture, they do well with a bit of cook time. Take this Braised Rapini and White Beans for example. Braising helps to tenderize the greens and take out the bitterness. The result is a delicious green that pairs well with creamy white beans. I love the Marcella beans from Rancho Gordo for this dish.

Instead of the croutons, as the recipe suggests, swap out for bread for cooked farro or barley. Now, we have a high protein, high fiber dinner option that’s reflective of the late winter greens we’re getting.

Dinner Plans for Week 10

We picked up our Riverdog Farm box this week and my kids were ecstatic for the mandarins that taste incredibly sweet. “Nature’s candy!” my son exclaimed. I’ll use a couple of them in a snack cake or muffins this week. My parents are in town for the next week (yay!!!) and lasagna was requested for Sunday Supper. Definitely happy to oblige.

  • Yellow Carrots
  • Green Cabbage

Our Game Plan for Dinner this Week:

Sunday: Lasagna with Seasonal Greens and Ground Beef

Monday: Grated Beet and Carrot Salad with Farro and Chickpeas

Tuesday: Salmon Fish Tacos with Quick Cabbage Slaw

Wednesday: Duck Confit with Duck Fat Roasted Potatoes and Balsamic Braised Collard Greens

Thursday: Ginger Soy Glazed Chicken Thighs with Crunchy Cabbage Salad with Miso Dressing

Friday: Herb Roasted Turkey Breast with Kale Pesto and Roast Cauliflower Mash

Saturday: Pizza Picnic with Seasonal Pesto, Crispy Prosciutto and Burrata
