It’s Week 17 of Dinner Plans and we’ve got springtime produce up and running!
Our Stepping Stone Farm CSA pickup day resumes this coming week and I can’t wait to see all the delicious fruits and vegetables Patrick has on deck for the season ahead. Our pickup day is also going to be weekly so we’ll see how we’re balancing both produce CSAs in the weeks to come. Lots of deliciously fresh salads and meals in our future!
Seasonal Cooking Tip: Eggs on the Regs
When it comes to seasonal cooking, this year I’m sharing a weekly tip here focused on preparing ingredients, preserving foods, and kitchen hacks that help you save time.
This week we’re talking about the versatility of eggs. Breakfast, and brunch, are some of my favorite meals of the day and egg based dishes are always a treat to make. And while I’m still shopping around to find the lowest prices in town, eggs have continued to be both an economical and protein-packed option for meals anytime of day.
Lately, I’ve worked to stretch our egg use by using store-bought egg whites from Costco for our omelettes or thinned out with either half-and-half or whole milk. Below are a few recipe ideas that stretch our egg use but are also delicious options for a brunch time gathering:

- Quiche with Spinach
Dinner Plans for Week 17
We opted to skip our Riverdog Farm box this week as we traveled for the holiday weekend. This coming week we’re resuming our Stepping Stone Farm CSA box pickups and the Riverdog box will also come in handy as we replenish produce for the week’s meals. I’ve got mandarins remaining to make some fruit preserves. Fresh oregano will be dehydrated or dried to use in soups, stews, and pasta sauces over the coming months. The last of the little gems for easy lunchtime salads with canned or tinned fish and a simple lemon dressing.

Saturday: Pizza Picnic featuring Dandelion Pesto with Prosciutto and Burrata
