    Dinner Plans: Week 11

Welcome to Dinner Plans: Week 11! Tonight the Oscars air and we look forward to this night each year. My husband and I have worked our way through seeing the best picture nominees and there were a few we love. However, we're very familiar with the best animated film nominees given life with kids.

St. Patrick's Day is also around the corner and corned beef is definitely on the menu. Over the years, we've started to show our children their multicultural heritage through food. This week, my husband's Irish ancestry will be a point of conversation. We share family stories and make foods his ancestors enjoyed. It helps to have a family cookbook to draw inspiration from. We'll also make Nigella's Chocolate Guinness Cake for dessert. It's now an annual tradition.

Here is our game plan for dinner this week:

Sunday: We didn't get to have our usual Pizza Picnic Saturday as the kids spent time with their grandparents (yay, grandparents!) so we will have it tonight. Mushroom Truffle Pizza will be for the grown ups. Four cheese on the menu for kids.

Monday: This Caramelized Red Cabbage, Onion and Leek Tart was a hit. We're having it again this week.

Tuesday: Enchiladas with Potatoes and Peppers (recipe test)

Wednesday: Shepherd's Pie (recipe test) for the ultimate comfort food for another rainy day in SoCal.

Thursday: Chilaquiles (recipe test: take 2)

Friday: Corned Beef with Nigella's Brown Butter Colcannon and Roasted Carrots

For the corned beef, there are loads of recipes on the internet. I've been using this one from MasterClass the past two years and have loved it.

Saturday: Given the leftovers we're bound to have, we will make a Rueben style pizza. Here is a recipe that giving us the inspiration.

Wishing you a nourishing week ahead. ❤️
