Dinner Plans: Week 14

It’s Week 14 of Dinner Plans and we’ve got something to celebrate this week!

A few of you shared with me that you found it helpful to see how we use up all the produce when we skip a delivery. We still have a bit of produce from last week’s CSA delivery to use. It may not look like much, but trust me: we’ll be able to feed a family of four with all that you see below.

There is a birthday this week! It’s my birthday and we will celebrate with steak and cake! 🥳 We have a family tradition where the family with the birthday gets to choose the dinner for our celebration. I’m choosing grilled rib eye steak with roasted garlic herbed butter and potatoes with chard. My husband and kiddos are making the cake. I am very excited about that!

This Week’s Dinner Plans

We’re cooking up pasta and making a few sauces to use up greens like carrot tops and cilantro. We’re using meaty black garbanzo beans in a salad with celery and parmesan to make for a delicious vegetarian main or as a side alongside grilled fish or chicken.

Here is our game plan for dinner this week:

Sunday: Celery Salad with Parmesan and Black Garbanzo Beans

Monday: Mini Sliders (the kids are requesting this for Monday and I’m saying yes.)

Tuesday: Grilled Rib Eye Steaks with Roasted Garlic Herb Butter and Brown Butter Colcannon with Chard and Cabbage (happy birthday to me! 🥳)

Wednesday: Rigatoni with Broccoli and Sun Dried Tomatoes

Thursday: Kimchi Fried Rice (I made my own kimchi! Will share how I did it this week as it’s super easy and very fun to do.) Recipe inspiration here and here.

Friday: Fish and Chips with Cilantro Garlic Sauce (recipe coming this week)

Saturday: Pizza with Charred Spring Onions, Arugula, with a mozzarella, parmigiano reggiano, and ricotta mix
