It’s Week 8 of Dinner Plans and we skipped our CSA delivery this week since we still have so much produce left. With bunches of zucchini, broccoli, and potatoes we are cooking up a number of meals to use every last bit.
Lasagna is always a great option for a Sunday Supper and this one will have zucchini and kale in it. It’s proof positive that dishes can be highly adaptable when it comes to cooking with the seasons, especially with our CSA box. I’m working on the recipe for this lasagna dish and will share it here later this week.
This week will also mark the beginning of Lent for those observing it. For us, that will mean that Fish Fridays will make their annual return and on Wednesday, too, since it will be Ash Wednesday, the officially start to the Lenten season. You’ll see more fish forward recipes on Fridays during Lent.

Friday: Speedy Salmon Burgers with Fire Roasted Corn Salad with Lime Cotija Dressing
Saturday: Salad Pizza Week 4 (TBD)
