Dinner Plans: Week 16

It’s Week 16 of Dinner Plans! This week, we are focused on reducing food waste.

I found a few produce items in the freezer that will need to be eaten soon. I found tomatillos and peppers at the bottom of our garage freezer. Those will become the week’s salsa alongside the Kumquat Jalepeño Salsa we’ve also enjoyed.

The week’s schedule isn’t letting up and there is a lot to navigate. That said, I’m aiming to get dinner on the table in 30 minutes or less. A quick search on my blog for “30 minutes” took to me a few favorite recipes that helped me plan our dinners for the week.

Dinner Plans for the Week

I found two butternut squash in our pantry basket that I was delighted to find. I was also shocked since I think we got those in a January CSA delivery. They’re still good as I peeled and diced them today for a meal prep head start. I’m roasting one for soup. I will dice and roast the other for salads. The goal here is to use up what we have. We’ve got a bit of ground turkey that will pave the way for an easy chili. I also picked up some locally grown favas from Dessa’s farm this week. Thinking a simple pasta dish with some garden fresh mint will do the trick.

Our Game Plan for Dinner this Week:

Sunday: Roasted Butternut Squash Soup

Monday: Potatoes with Turkey Chorizo served with Rice and Slow Simmered Beans

Tuesday: Grilled Fish Tacos with Kumquat Jalepeño Salsa

Wednesday: Pasta with Fava Beans and Mint

Thursday: Easy Turkey Chili

Friday: Spring Onion and Asparagus Tarts with Creme Fraîche

Saturday: Pizza Margherita
