The Best Healthy Low Carb Turkey Chili Easy Recipe

Today I’m sharing an easy recipe for the best turkey chili that is low carb and filled with all the healthy ingredients we know and love in a classic chili. 

When the weather turns a bit cooler, this is a low carb chili recipe that my whole family loves. It’s also my favorite way to add in a number of vegetables from our CSA box making this my new favorite autumn comfort food option for the season. Ingredients for the Best Healthy Low Carb Turkey Chili Recipe

This healthy turkey chili is ready in no time at all. Here’s what we need to make this large pot of a healthy white turkey chili recipe that’s also a great fit for game day: 

  • Lean white turkey: In lieu of ground beef, we’re opting for a lean protein like lean ground turkey.  It is high in protein and super filling in this turkey and bean chili. I love the ground dark meat turkey as it adds more flavor but you can also use lean white meat turkey. You can also swap this for ground chicken as well. 
  • Cannellini Beans: I love the brothy white beans in this low-carb chili recipe and while you can use kidney beans, the texture and creaminess of the white beans here help us to not rely too heavily on dairy. 
  • Anaheim Peppers: We’ve been getting a bunch of Anaheim peppers in our weekly CSA box and this is the best chili recipe in which to use them. Of course, if you don’t have Anaheim peppers you can definitely use diced red bell pepper in their stead. Peppers are mild here and since we’re using lots of seasonings, we’re creating a layer of warmth and subtle heat in this comforting chili. 
  • Herbs & Aromatics: These are what give some added flavor to our big pot of chili. We’ll need minced yellow onion, garlic cloves, and a bit of dried herbs like oregano. 
  • Dried Spices: Since we’re using ground turkey here, we want to add tons of flavor and the ground cumin, chili powder, cayenne, and paprika will go a long way in this great recipe to add loads of flavor.
  • Stock of Choice: In this recipe, I’m using homemade chicken stock. You can use chicken broth or vegetable broth. Homemade turkey stock is also a great choice given our use of turkey. 
  • Topping Ideas: There are lots of topping ideas that can be the perfect accompaniment for this hearty meal. A few dollops of creme fraiche or sour cream, torn cilantro leaves, diced tomatoes, shredded cheddar cheese, even a few dashes of your favorite hot sauce.

How to Prep This Delicious Low Carb Turkey Chili Recipe

Preparing this delicious chili with lean meat take 

  • Heat olive oil in a large pot or dutch oven over medium heat. Once heated, add the onion and garlic and cook, stirring, until the onion is translucent, about 5 minutes. Add the peppers and season with kosher salt and pepper.
  • Add the ground turkey, and using a wooden spoon, break up the meat into smaller pieces. Cook turkey until it is no longer pink, about 5 minutes.
  • Next, add the ground cumin, ground coriander, chili powder, dried oregano, chili powder, paprika, and a pinch of cayenne pepper. Stir together all all the spices are well combined with the meat, peppers, and aromatics. Cook until the spices begin to toast and release their fragrant aromas, about 1 to 2 minutes.
  • Add the beans with their bean broth, stock, and bring the pot to a boil. Once boiling, reduce the heat to simmer and cook the chili, uncovered for about 15 to 20 minutes, to allow flavors to meld together and the chili to thicken slightly.
  • Ladle chili into bowls and garnish as desired.
  • Freezer friendly tip: allow chili to cool completely before portioning out into freezer bags. This freezer meal will keep for up to 6 months. Make sure to freezer without the toppings for best results.

Ingredients
  

  • 3 tablespoons olive oil
  • 1/2 yellow onion minced
  • 3 garlic cloves minced
  • 3 Anaheim peppers stems and seeds removed and finely chopped; could also use green bell pepper or a 4-ounce can of diced green chiles
  • 1 pound ground white turkey meat
  • 1 15-ounce can of cannellini beans with bean broth
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground chili powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground paprika
  • 2 cups chicken stock can also use veggie stock or turkey stock
  • Garnish options: a few dollops of creme fraîche or sour cream could also add torn cilantro leaves, shredded cheese if you like, and a few dashes of your favorite hot sauce
