It’s Week 19 of Dinner Plans and we’re cooking up a storm!
The other day I heard a parenting humor account I follow on IG talk about “Maycember” and I couldn’t help but chuckle. The month of May has just begun and we already feel the heat of end of year activities, work projects building momentum, and a few exciting projects that are starting to take shape. We’re excited for what lies ahead but this month is already filled to the brim. This has me thinking about ways to make meal prep easier and how to focus my effort and energy on keeping everything simple.
Dinner Plans for the Week
This week’s CSA box is filled with the beauty of spring. Oranges will be juiced for morning breakfasts. We were lucky enough to receive another coconut. I’m adding it to my smoothie stash. Next, we’ll pickle cucumbers for sandwiches and burgers for grill season. We’ve got more fava greens so pesto is on the menu. It’s a bright and vegetal pesto perfect for salad dressing. I’ve got a chunk of feta to use up as well. Greek and Mediterranean inspired dishes will take center stage this week. I love when shopping the fridge and pantry inspires the menu.
Our Game Plan for Dinner this Week:
Sunday: Roast Chicken Salad with Fava Greens Pesto Vinaigrette
Monday: Mediterranean Inspired Chicken Salad with Creamy Greek Inspired Dressing
Tuesday: Vegan Sopes with Fava Beans and Chipotle Marinated Mushrooms
Wednesday: Crispy Fried Chicken Sandwiches with Refrigerator Pickles
Thursday: Orange Chicken with Steamed Broccoli and Jasmine Rice (Christie at Home’s recipe is our go-to for this dish!)
Friday: Grilled Fish Tacos
Saturday: Pizza with Fava Greens Pesto, Spring Peas, Burrata, and Crispy Pancetta
