It’s Week 4 of Dinner Plans and we are back to our weekly CSA pickups!
After 4 weeks of skipping deliveries I was thrilled to be back at the farmers market on this rainy Sunday to pick up the first box of the year. Winter squash is in full swing now and the California citrus is also making it’s grand return. Check down below to see what we’re cooking up for dinner this week.
Dinner Plans for the Week
We’ve got more amazing Black Futsu Pumpkin that I will roast today and freeze the puree for a future night of soup. With its sweet and nutty flavor this is perfect for soups or even in making a lasagna sauce mixing the puree with bechamel. We have Tuscan kale and arugula on hand for winter salads and loads of citrus for delicious dressings. It’s a week filled with so much winter goodness for dinner. Can’t wait to start cooking!
Our Game Plan for Dinner this Week:
Sunday: Ramen from our favorite local place for a Post Hike Dinner
Monday: Chopped Salad with Kale, Apples, and Beans
Tuesday: Sopes with Refried Beans, and Sauteed Lion’s Mane, Onions, and Jalapeños
Wednesday: Turkey Chili with Jalapeño Cheddar Biscuits
Thursday: Maple Roast Harissa Carrot Soup with Crispy Mushrooms (could also use this Herby Polenta in lieu of the soup)
Friday: Grain Bowl with Farro, Roast Butternut Squash, and Greens
Saturday: Pizza with Shallots, Calabrian Chiles, Artichokes, Bell Peppers and Boccocini
