It’s Week 6 of Dinner Plans and we are in the thick of winter squash!
This time of year finds us in major soup and stew mode. With the recent rains in Southern California, dinners at home have been all about cozy winter comfort food that honors the hardy vegetables we’ve been receiving.
Dinner Plans for the Week
This week’s CSA box brought to us a big head of cabbage that I will work to craft a number of different recipes for. If you got a big round ball of cabbage in your box, fret not. It’ll keep well in the refrigerator for a few weeks! I like to make coleslaw, which will be great for next week’s Super Bowl to serve alongside some turkey burger sliders. I will also make colcannon, a nod to my husband’s Irish ancestry, to serve underneath some braised bratwurst. More butternut squash means harvest salads with a protein of choice will put these winter squash beauties to good use. The box was bountiful. Now, let’s cook!
Our Game Plan for Dinner this Week:
Sunday: Simple Beef Chili
Monday: Tomato & Rice Soup
Tuesday: Sopes with Refried Beans, and Sauteed Lion’s Mane, Onions, and Jalapeños
Wednesday: One Pot Beef Stew
Thursday: Turkey Chili with Jalapeño Cheddar Biscuits
Friday: Roast Butternut Squash & Farro Salad
Saturday: Pizza with Fontina, Caramelized Onion Jam, and Mushrooms
