Dinner Plans: Week 12

It’s Week 12 of Dinner Plans and we’ve got St. Patrick’s Day on the mind. Each year I love making a batch of Corned Beef Brisket and our CSA box this week has all the goodies we need to make this festive dinner.

We’ve had lots more rain in recent days and I’m now turning my attention to all things garden prep. From research flower gardens to starting seeds, I’m excited to see what the growing season will feel like for us here in Napa Valley.

Seasonal Cooking Tip: Cooking all the Cabbage

When it comes to seasonal cooking, this year I’m sharing a weekly tip here focused on preparing ingredients, preserving foods, and kitchen hacks that help you save time.

This week we’re talking about cabbage. We’ve received a couple heads of cabbage each week and I’ve been finding all the ways to cook them up. They’re a great source of fiber and are rich in vitamins and nutrients. Different cabbage varieties are also great for fermenting. I personally love Napa cabbage for kimchi. I have a few cabbager ecipes coming to the blog for a colcannon with cabbage and a cabbage-cilantro slaw. Stay tuned for those. In the meantime, here are a few you’ll love to make this season:

Dinner Plans for Week 12

We picked our Riverdog Farm box this week and the kids were delighted to see more mandarins in the box. I will freeze beets for smoothies and have lots of dishes to think up for the cabbage. I found a couple of daikon radish too that I’ll turn into a quick kimchi for the morning breakfast scrambles as well.

Our Game Plan for Dinner this Week:

Sunday: Roast Chicken in the Style of Zuni Cafe (recipe test)

Monday: Corned Beef with Colcannon and Carrots

Tuesday: Potato & Chorizo Tacos with Cabbage Slaw

Wednesday: Farro Salad with Kale Pesto alongside Roast Carrots and Beets

Thursday: Chipotle Lime Roasted Cabbage with Chorizo and Beans

Friday: Mexican Fish Soup (Caldo de Pescado)

Saturday: Pizza with Mushrooms, Fontina, and Fresh Thyme
