It’s Week 12 of Dinner Plans and it’s going to be a delicious one!
This is one of those weeks where we skipped the CSA delivery because we still have so much produce left over. Between recipe tests and holiday meals, not everything was consumed. To ensure we reduce food waste, we will craft meals from what remains.
When making dinner plans each week I take into account what we have in the fridge, freezer, and pantry. Looking at what produce remains helps to see how we can maximize meals for dinner while ensuring nothing spoils or goes bad. Today, for instance, I’ll prep pesto using arugula and spinach. The recipe for that will come to the blog later this week and will serve a great example of making delicious meals on a budget with seasonal produce. I look forward to sharing that with you this week!
Here is our game plan for dinner this week:
Sunday: Spinach-Arugula Pesto Pasta with Mini Meatballs (recipe coming this week)
Monday: Pasta with Broccolini and Sun Dried Tomatoes
Tuesday: Enchiladas with Potatoes and Peppers (final recipe test)
Wednesday: Turkey Meatloaf (recipe test) with Caramelized Cabbage Pasta
Thursday: Buffalo Cauliflower Tacos
Friday: Herby Slow Roasted Salmon with Garlicky Fingerling Potatoes (recipe test)
Saturday: Spinach-Arugula Pesto Pizza with Burrata and Crispy Prosciutto
