In our efforts to eat more protein as part of a healthy breakfast, this egg bite recipe has been a game changer for our busy mornings. The use of egg whites and whole eggs yields an egg mixture that mimics the consistency of the sous-vide method in the Starbucks version.

    This is an incredibly easy breakfast recipe that does not require fancy equipment can be ready in 30 to 40 minutes time. I like to prep a batch of these on Sunday to kick start our quick breakfast routine. The list of simple ingredients also gives you room and flexibility to try different filling options from cheddar cheese to diced red bell pepper. Your options are endless and the focus here is how to bake these egg white bites without using a sous vide cooker. No need for fancy equipment to make these!

    A bonus: we can achieve that fluffy texture without any cheese! For my dairy-free friends here, you'll appreciate the absence of cheese and dairy here though we still get that delicious texture quintessentially associated with the sous vide egg bites. 

    The Simple Ingredient List to Make These Egg White Bites in the Oven

    When it comes to the ingredient list to make these tasty egg cups, here's what we need: 

    • 3 whole eggs: Could I make these solely with egg whites? Likely yes. I love getting the nutrients from the egg yolks so we'll only use about 3 here for the full recipe that will yield a total of 12 homemade egg muffins. 
    • 3 cups egg whites: One of our main ingredients here and the ingredient responsible for keeping this protein packed. 
    • Kosher salt and ground black pepper to taste
    • 2 Tablespoons avocado oil: You can use cooking spray here too. If you don't have avocado oil or don't want to use it you can use any neutral flavored cooking oil you like. The goal is to grease the silicone muffin tray to prevent our egg bites from sticking. Trust me here. You'll need it. 

    As for equipment, we'll need: 

    • Silicone muffin tin: I've tried this method with a stainless steel muffin pan and have also use parchment paper liners for the muffin trays. I've found the best, most consistent success with the silicone molds. Greasing them well helps prevent sticking and it also yields even consistency in cook time for the egg white bites. 
    • Rimmed baking sheet or baking dish: To get the consistency and texture that mirrors the egg white version from the famed coffee shop we need to create a water bath. The rimmed baking sheet helps use do that. You can also use a large baking dish in which the silicone egg bite molds will fit.

    How to Make the Copycat Starbucks Egg White Bites Recipe in Oven

    ​It will take just minutes to prepare this simple recipe and these egg white bites will be ready in just about 30 minutes. Here's how we make them: 

    • Preheat oven to 375 degrees Fahrenheit. Place a silicone muffin pan on a rimmed baking sheet. Generously grease muffin pan with oil.
    • In a large mixing bowl, whisk together the egg, egg whites, kosher salt, and ground black pepper. Whisk until mixture is frothy.
    • Evenly distribute egg white mixture in the 12 muffin cups in the muffin pan.
    • Using a measuring cup, pour about 4 cups of water on the bottom of the rimmed baking sheet. You want enough water to just cover the bottom of the baking sheet. This will help the egg white bites to steam on the bottom and not burn during baking.
    • Bake egg white bites for about 30 minutes until edges are golden brown and the center of each muffin is set.
    • Allow to cool for 5 to 10 minutes then use a spoon to remove each egg white bite from the muffin cups. Store any leftover egg white bites in an airtight container in the refrigerator for up to 3 days.

    Storage Tips, Substitutions, and FAQ

    What's the best way to store leftovers?

    Bring cooked egg white bites to room temperature before storing in an airtight container. These will keep in the freeze for up to 3 days. You can also store them in a freezer bag in the freezer for up to a month. To reheat in the oven, reheat in a 300 degree oven for about 15 to 20 minutes until warmed through. 

    This recipe is just for plain eggs. Can I add to it?

    Absolutely! You can incorporate your favorite veggies in this mix. Sauteed peppers, a splash of hot sauce, wilted spinach, and a sprinkling of feta cheese is a favorite combo here. You can also add in shredded mozzarella cheese, grated gruyere cheese or parmesan cheese. I also love blending the regular eggs mixture with cottage cheese or ricotta cheese for added protein and even creamier texture but if you're looking to avoid cheese and added dairy you can skip this. Garnish these egg bites with green onions and bacon bits for some added umami flavors if you like!

    • 1 Rimmed baking sheet My favorite rimmed baking sheet.
