Dinner Plans: Week 17

It’s Week 17 of Dinner Plans and we’re springing into more celebrations!

It is our anniversary today! My husband and I will spend a portion of the morning celebrating with our kiddos. Then, we will pick up the CSA box. Fun fact: We were married on the beach at 7am! I truly love sharing these memories with our kids as they grow older. This was the first year our oldest asked lots of questions about the day and wanted to see the location where we married. We are spending the morning at Park Bench Cafe where we had our breakfast reception. Love reliving memories this way!

Dinner Plans for the Week

This week’s CSA box is filled with a variety of citrus! I found guavas in our box too and will make guava paste. Doing this will pave the way for a summertime BBQ sauce (stay tuned for that recipe!). With the amount I citrus on hand, I will work to zest and juice them. Doing so will give me zest to use for marinades and flavored sugars. I also love having fresh squeezed orange juice. Whenever we get the oranges in our box I aim to do this. I also picked up a couple special steaks for our anniversary dinner tonight.

Our Game Plan for Dinner this Week:

Sunday: Filet Mignon with Red Wine Reduction for Anniversary Dinner ❤️

Monday: Crispy Oyster Mushroom Tacos inspired by Jess Damuck

Tuesday: The Easiest Slow Cooker Pork Roast for Carnitas Taco Salads

Wednesday: Mediterranean Style Marinated Chicken with Lemon-Mint Tabbouleh & Couscous

Thursday: Grilled Turkey Burgers with Spinach & Arugula Pesto Aioli

Friday: Spaghetti with Charred Scallions & Red Pepper Flakes

Saturday: Pizza Salsiccia with Shallots, Italian Sausage, and Fresh Mozzarella
