    Dinner Plans: Week 18

    It's Week 18 of Dinner Plans and we're getting ready to march right into May!

    It's hard to believe April is drawing to a close but May also brings a whole host of things to celebrate for our family here. With a couple of birthdays this next month and the end of school year fast approaching, we're relishing these days as whispers of summer signal the return of a delicious season ahead!

    Dinner Plans for the Week

    This week's CSA box is filled with a number of seasonal goodies like fava bean greens, citrus, radishes, and I spotted two tomatoes! The fava greens are such a great alternative to spinach so we'll treat it as such. Use the raw leaves in salads or sauté them with a bit of shallot and mushrooms for a yummy breakfast scramble. This week, I'm turning the bunch of greens into a seasonal pesto. Stay tuned for that specific recipe! In the meantime, I share a few pesto recipes below that I'll draw from to make this variation. Sunday will be a day for prepping sauces like pesto and enchilada sauce so dinner can be ready in my 30-minutes or less goal for the week ahead.

    Our Game Plan for Dinner this Week:

    Sunday: Risotto with Fava Greens, Fava Beans, and Peas (more risotto inspo here)

    Monday: Radish Tartine with Mint Pea Pesto (Sharing recipe idea here from La Brea Bakery for the tartine. For pestos check out: Spinach & Arugula or my Zucchini & Basil Pesto.)

    Tuesday: Chicken Enchiladas Suizas (recipe idea here from Mexico in My Kitchen)

    Wednesday: Mediterranean Style Marinated Chicken Salad

    Thursday: Orange Chicken with Steamed Broccoli and Jasmine Rice (Christie at Home's recipe is our go-to for this dish!)

    Friday: Fish en Papillote with a dollop of our seasonal pesto (recipe idea here from Nom Nom Paleo)

    Saturday: Pizza Salsiccia with Shallots, Italian Sausage, and Fresh Mozzarella on repeat
