It’s Week 28 of Dinner Plans and we’re seeing the daylight for summer produce!
We’re in countdown mode after putting our house up on the market and accepting an offer this week! We’ve begun packing now and are gearing up for a big move to Northern California. I am excited for the season ahead, but oh my goodness I am not excited about the packing. That said, dinners need to be simple and even easier in the days ahead.
Dinner Plans for the Week
This week we saw a small bunch of marketmore cucumbers in our box and I absolutely love these for pickling. They make a great addition to those summertime burgers and sandwiches! So when I don’t think I’ll use them up by week’s end, I make a batch of Refrigerator Pickles. I will also do the same with red onion and will try carrots next, too.

DINNER PLANS FOR THE WEEK
I’m picking up more fava beans and garlic scapes which have been so good in a variety of dishes we’re making at home! Checking the list on Sage Mountain Farm’s website for what we’re getting in our boxes this week helps me to shop our pantry, fridge, and freezer in order to plan meals on Sunday.
Sunday: Watermelon, Cucumber, and Mint Salad with a Chili Lime & Cotija Dressing
Monday: Fava Falafels
Tuesday: DIY Chipotle Burrito Bowls which we could literally eat each week!
Wednesday: Shrimp Tempura with Rice, Edamame Beans, and Spring Rolls
Thursday: Slow Roasted Cod with Cauliflower Steaks and a Quick Romesco Sauce
Friday: Baja Fish Tacos with Fresh Pico de Gallo
Saturday: Pizza Margherita with our CSA tomatoes and Garden Basil
