Dinner Plans: Week 49

It’s Week 49 of Dinner Plans and we’re striking a balance between holiday meal leftovers and nourishing ease.

Our first Thanksgiving in Napa was a lovely one shared with family and so many delicious dishes. We ended the weekend with a beautiful hike in Muir Woods. Now, I’ve got my eyes set on the weeks ahead as we round the corner to Christmas in SoCal. I hope the long weekend was filled with everything you needed.

Dinner Plans for the Week

We had an earlier CSA box pickup this week from Riverdog Farm. Our regular pickup day is Thursdays so we had it moved to Tuesday on account of the holiday. It was a timely box and I used a bulk of its contents in our holiday meals. We have plenty of produce to get through the next week’s delivery but I do have an abundance of certain produce so the week’s meals will see those featured here.

Here’s what we picked up our CSA shares this week:

Riverdog Farm:

  • Pomegranates
  • Yukon Gold Potatoes
  • Tuscan Kale
  • Little Gems
  • Butternut Squash
  • Red Beets

Our game plan for dinner this week:

Sunday: Leftover Turkey Pot Pie

Monday: Kale Panzanella with Roast Squash and Pesto Vinaigrette (still cooking our way through all our freezer Pesto)

Tuesday: Mexican Fish Soup (Caldo de Pescado)

Wednesday: Grilled Salmon Burgers with Balsamic Roasted Beet Salad

Thursday: Spiced Squash Soup with Crispy Breadcrumbs and Mushrooms

Friday: Roast Beet Galette with Little Gems Salad

Saturday: Pizza with Caramelized Shallots and Mixed Mushrooms
