Dinner Plans: Week 13

It’s Week 13 of Dinner Plans and all signs point to Spring is here!

We actually had 2 CSA pickups this week. We picked up our regular CSA delivery on Sunday at the Farmer’s Market. On Saturday, we got to check out an amazing local farmstand, From Her Farm. Dessa is doing amazing things there. There are farm fresh eggs, organically grown produce, and more. If you’re local to Pomona, Claremont, Montclair, Ontario, Upland, and Rancho Cucamonga areas, check it out.

This week we’re craving comfort and that’s to be found in roasting vegetables and quality meats along with some cozy pastas and soups. We have a bit of truffle gouda left to use up and I’m thinking of a mac and cheese recipe with it. I’m testing it again Monday and if it works out, I will share it with you later this week. That will make for a delicious vegetarian option for weeknights. I look forward to sharing that with you this week!

Here is our game plan for dinner this week:

Sunday: Herb Roasted Chicken with Herby Polenta and Roasted Root Veggies (recipes coming this week)

Monday: Truffle Mac & Cheese with Crispy Mushrooms (final recipe test)

Tuesday: Buffalo Cauliflower Tacos (can’t get enough of these!)

Wednesday: Penne with Spinach and Arugula Pesto (using up the last of the pesto!)

Thursday: Roast Chicken Vegetable Soup (recipe coming this week)

Friday: Slow Roasted Herb Salmon with Braised Lentils and Roasted Garlic Butter (recipes coming this week)

Saturday: Pizza with Charred Spring Onions, Artichokes and Garlic-Lemon Ricotta
