Dinner Plans: Week 14

It’s Week 14 of Dinner Plans and we are gearing up to celebrate this week!

April always feels like a special month to me. There are a couple of milestone celebrations: my birthday, Jerry’s and my wedding anniversary, and the broader celebrations of Spring. It’s the start of the second quarter of the year and spring definitely starts to feel like it’s in full swing now. Blossoms are making their way into the garden and there is so much that signals renewal.

Spring produce is ramping up now and we’re seeing so many goodies in our weekly CSA box. From salad greens to beets to loads of citrus. I’m craving bright, vibrant, and zesty meals now. I harvested a bunch of sugar snap peas from the garden which have paved the way for crunchy salads and crudité for afternoon snacking.

Dinner Plans for the Week

This week we picked up our CSA box and it was full of Easter time goodies. I’m grating the beets with carrots for a lunch time salad that is easy to prep for a few days. I’ve got salmon burgers on repeat for salads and a quick slaw that is zesty and bright for easy, speedy weeknight meals. For the spinach and arugula I have on hand, I’m making a pesto for pizza night and for a sauce for meatballs. I’ve been cooling it on pasta lately but I love pesto so I am finding myself entering a saucy grain bowls era. I am not mad about that.

Our Game Plan for Dinner this Week:

Sunday: Spiral Ham with Blood Orange & Rosemary Glaze, Carrots on Parade, Roast Potatoes and Caramelized Cabbage

Monday: Vegan Mexican Sopes

Tuesday: Chipotle Lime Salmon Tostadas

Wednesday: Grilled Salmon Burgers with Quick Slaw

Thursday: Steak Frites with Garlic Herby Compound Butter

Friday: Baja Fish Tacos inspired by Masienda’s Recipe

Saturday: Pizza with Sliced Sugar Snap Peas, Prosciutto, a Spinach and Arugula Pesto, and Burrata for a lovely spring time change up
