Dinner Plans: Week 15

It’s Week 15 of Dinner Plans and we are reveling in the latest spring produce!

After a week of birthday celebrations and a jam packed week ahead of all-day Zoom calls I’m trying to keep grounded in meals that are easy to assemble and use up all the goodies from our recent CSA box.

Who else feels like dinners need to be beyond simple when the weeks are full and super busy? During this time I try to keep meal planning super easy and slides and meatballs that can be prepped ahead of time make this easy for speedy dinners.

Dinner Plans for the Week

This week we put the CSA box on hold as we work to enjoy the rest of the produce. The last of the beets will get used in breakfast smoothies to power up for long days in front of the computer. I’m making another batch of orange jam and juicing the last of the citrus for breakfast juice. A spring time puff pastry tart will be made using the spring onions from our CSA, snap peas from the garden, and a small bunch of asparagus I picked up at the farmer’s market.

Our Game Plan for Dinner this Week:

Sunday: Turkey Sliders with Sweet Potato Fries

Monday: Easy Meatloaf Meatballs with Greens

Tuesday: Chicken Tostadas using store bought rotisserie chicken

Wednesday: Grilled Salmon Burgers with Side Salad

Thursday: Spring Onion, Asparagus, and Pea Tart

Friday: Frittata Friday with Chard and Mushrooms

Saturday: Pizza with Sliced Sugar Snap Peas, Arugula, Shaved Zucchini, a Spinach and Arugula Pesto, and Burrata

From favorite recipes to new things with a wide variety of ingredients, cooking delicious food with our CSA definitely gets us out of a dinner rut and reduce food waste.
