Dinner Plans: Week 25

It’s Week 25 of Dinner Plans and we’re celebrating this father’s day with a Burger Bar and Cherry Pie for our favorite guy!

This week’s CSA delivery is bringing us lots of goodies like garlic scapes, bell peppers, and an abundance of leafy greens for summer salads. This week I also picked up some cherries that we’re starting to see in season. We’re making cherry pie with cherries from the farmer’s market. We will also make more popsicles after we pick up more pineapple which the kids can’t get enough of.

Seasonal Cooking Tip: Making the Freezer Our Friend

When picking up our produce box, there are always a few items where I know we won’t eat them before the next delivery. That said, I leverage our freezer to preserve fruits and veggies at their peak freshness. Here is a short list of what I do:

  • First, I wash and trim the leaves from sturdy greens, like spinach and kale, before giving them a rough chop and placing them in a freezer bag. I will keep these on hand for smoothies or to add to a pasta dish or stir fry.
  • Next, I peel and dice beets and freeze for smoothies. This is my go-to move when I want to up the veggie intake for our toddler through her morning smoothies.
  • Finally, I make sure to label any prepared foods with the month and day it was prepped for freezing so I know what needs to be used up soon. That will help inform the meal plan for the week. Most items will freeze well for up to six months though I try to use up items I freeze within three months given our weekly CSA box deliveries.

Dinner Plans for the Week

Today we celebrate Father’s Day with a Burger Bar and Cherry Pie. Stay tuned for an incredible Cherry Pie Recipe that will be great for the upcoming Fourth of July holiday! Checking the list on Sage Mountain Farm’s website for what we’re getting in our boxes this week helps me to shop our pantry, fridge, and freezer in order to plan meals on Sunday. We’re also whipping up another batch of Pineapple and Coconut Popsicles as the kids love these lately. I found condensed coconut milk at the store which is now saving me a step in making it. This is a major win!

Here is our game plan for dinner this week:

Sunday: Burger Bar with all the fixings and Cherry Pie (pie recipe coming soon)

Monday: Whole Wheat Flatbread with Caramelized Fennel, Olives, and Shallots (recipe test)

Tuesday: Burrito Bowls with Beans, Rice, Peppers, and Fire Roasted Corn Salsa

Wednesday: Fava Bean Raviolis with Mint (recipe test)

Thursday: Mini Meatball Sub Sandwiches with Garlic Scape Aioli (recipe test)

Friday: Sausage and Ricotta Pasta Bake (this is a family fave on repeat!)

Saturday: Pizza with Caramelized Onions, Sausage, and Blistered Garlic Scapes
